This overnight oats recipe is a great breakfast option for those who start off their morning with an energy boost.


It’s full of fiber from the oats and chia seeds to keep you full for longer, plant-based fats from the coconut milk to support steady energy and the slowing down of digestion when paired with the oats.


One of the best thing about this recipe? You prep it the night before, so it’s ready to grab and go. No stress morning.

What You Will Need:

  • 1/2 cup rolled steel cut oats

  • 1 cup unsweetened almond or coconut milk

  • 1 teaspoon chia seeds

  • A pinch of cinnamon

  • A ¼ teaspoon vanilla

  • A 1/4 teaspoon sugar or maple syrup (optional)

  • Mix the ingredients together, refrigerate overnight

  • Add chopped walnuts or berries in the morning


I find sometimes you may have to add more milk depending on your preferred consistency.
