Fall Cozy Anti-Inflammatory Chicken Soup

ree

Nothing says Fall better than a hot bowl of homemade, nourishing soup.

I'm an unconventional cook who does not like to spend a lot of time in the kitchen. There will be no sauteing of ingredients here!

If you are short on time but still crave a nutritious meal, this is it.

Ingredients:

  • 6 chicken thighs, chopped in halves

  • 1/2 butternut squash, cubed

  • 2 carrot, thinly sliced

  • 2 small sweet potatoes, cubed

  • 1 small red onions, thinly sliced

  • Sprig of thyme

  • 2 chopped green onions

  • 3 cloves of garlic

  • 1/4 teaspoon of ginger

  • 1/2 cup coconut milk

  • 5 sticks of rice noodles (optional -broken into small pieces)

  • 8 cups of water

  • 2 cups chicken broth - try making your own if you have food sensitivities -

  • 1 teaspoon tumeric

  • 1/2 teaspoon black pepper

  • 1/2 teaspoon onion powder

  • 1/2 teaspoon garlic powder

  • 4 pimento seeds

  • Salt to taste

  • Depending on your palette, you may have to add more seasoning to taste

Let's Cook!

  • Combine all the ingredients except the noodles into a big soup pot.

  • Let the chicken and all the ingredients cookout. Taste for flavour.

  • 5 minutes before you are ready to remove the pot from the stove, add the rice noodles.

Enjoy!
