Fall Cozy Anti-Inflammatory Chicken Soup

Nothing says Fall better than a hot bowl of homemade, nourishing soup.
I'm an unconventional cook who does not like to spend a lot of time in the kitchen. There will be no sauteing of ingredients here!
If you are short on time but still crave a nutritious meal, this is it.
Ingredients:
6 chicken thighs, chopped in halves
1/2 butternut squash, cubed
2 carrot, thinly sliced
2 small sweet potatoes, cubed
1 small red onions, thinly sliced
Sprig of thyme
2 chopped green onions
3 cloves of garlic
1/4 teaspoon of ginger
1/2 cup coconut milk
5 sticks of rice noodles (optional -broken into small pieces)
8 cups of water
2 cups chicken broth - try making your own if you have food sensitivities -
1 teaspoon tumeric
1/2 teaspoon black pepper
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
4 pimento seeds
Salt to taste
Depending on your palette, you may have to add more seasoning to taste
Let's Cook!
Combine all the ingredients except the noodles into a big soup pot.
Let the chicken and all the ingredients cookout. Taste for flavour.
5 minutes before you are ready to remove the pot from the stove, add the rice noodles.
